Come and discover Sauris’ malghe<\/em> (mountain huts)<\/strong> in the summer, from June to September<\/strong>, and relive the passion of a traditional activity still intact, which in the past represented the heart of the village’s economy.<\/p>\n

In the past, the mountain huts around Sauris were numerous, as the pastures possess a superior organoleptic richness,<\/strong> due to a particular conformation in the valley. Milk has therefore an exceptional flavor, and raw milk is used to preserve all its enzymatic properties. This is the reason why Sauris malga cheeses<\/strong>, like those aged and matured by the cheese refiners of Malga Alta Carnia <\/strong>at 1,200 meters above sea level, are so popular!<\/p>\n

During the long winters in the mountains, it was a valuable source of nourishment<\/strong>, thanks in part to its versatility, as it was used not only for nutritious soups and stews, but also for flour in making bread and polenta and was even a coffee substitute!<\/p>\n

The first evidence of this legume in Sauris dates way back to 1683 and it never completely disappeared from local gardens, but was cultivated in an increasingly residual way. It became a Slow Food Presidium <\/strong>a few years ago by returning to prominence<\/strong> in the gastronomic traditions of the Sauris community<\/strong>, thanks to various projects aimed at their recovery and increased value.<\/p>\n
